Study on the consumption of unconventional vegetables in the municipality of São João del-Rei / MG: an approach in search of forgotten values

Abstract

It was performed a Market research with 420 interviewees and the objective was to determine
the profile of consumers of non-conventional vegetables in São João del-Rei-MG and identify
which are the most consumed unconventional vegetables as well as the degree of knowledge
of these interviewees. The consumption of unconventional vegetables in the municipality of
São João del-Rei is low. The lack of knowledge of the population regarding unconventional
vegetables and the way of preparation makes their consumption reduced. The most consumed
vegetables are taioba, ora-pro-nobis, yam-yam and serralha. The consumption of taioba and
ora-pro-nobis is of major importance because they are part of the local culture.
