Abstract

Given the choices made by consumers on a daily basis and observing the tendencies to acquire
healthy products, it is observed that there is a possibility in the market of the family farmer
to promote the supply of more healthy foods through the supply and use of pequi (Caryocar
brasiliense Camb.). The objective of the present work was to demonstrate from an analysis of
average costs, the possibility of producing cake with pequi nut by sustainable use of pequi. The
final analysis allowed us to conclude that this product is technically and economically feasible.
