Abstract

The cultivation and processing of agroecological quinoa dealt with in the present article covers
a project of farmer-experimenter developed from a partnership between teachers, researchers
and students of the Faculty of Agronomy and Veterinary Medicine and a family of farmers. The
objective of the project was to build shared knowledge with the farmer and his family seeking to
adapt to the technology of cultivation and processing of quinoa to the conditions of the property
family agroecológica. Experience has demonstrated that the farmer-experimenter method is
adequate so that the technician can understand the family’s experience and abilities, for the
farmer’s experimentation and understanding of the technology, as well as for observing the
results of new technology.
