The objective of this work was to evaluate the amino acid profile of lettuce, cv. Vanda, under
organic fertilization by the GC-MS method. Two experiments were carried out at FazendaÁguaLimpa,
FAL-UnB, between August 2012 and July 2013, with a randomized block design, 10
treatments in 4 replicates. The treatments were: 1. chemical fertilization (control); 2. organic
compound; 3. cattle manure; 4. sheep manure; 5. bird dung; 6. chicken bed; 7. chemical fertilization
+ cattle manure; 8. chemical fertilization + sheep manure; 9. chemical fertilization +
poultry manure; 10. chemical fertilization + chicken bed. It was recorded the concentration of
amino acids on lettuce plants from all treatments. Five amino acids were identified and it was
observed statistical differences for pyroglutamate and GABA that showed a significant increase
under organic fertilization. High concentration of pyroglutamate, with anticarcinogenic and
antimicrobials activity, was observed in plants under organic fertilization
