Abstract

The areas planted with acerola in Brazil have grown in recent years due to the considerable
nutritional value of their fruits and the economic potential of the crop. The Submédio of the São
Francisco Valley stands out as being one of the main producing regions of the Northeast, with
an average productivity of 24t/ha. Acerola is known to present already consolidated potential
for industrialization, once it is consumed in the form of juices, used in the enrichment of food
products and in the form of nutraceuticals. The objective of this work was to determine the
vitamin C content of fruits of the organic honeysuckle cv. Junko in two maturation stages (green
and mature) grown in Petrolina-PE. The average content of the mature fruit was 2,373.77
mg / 100g and in the green fruit 3,705.57 mg / 100g, with a reduction in vitamin C levels with
maturation. There was also a statistical difference between the contents at maturation stages
evaluated.
