Abstract

The objective of this study was to evaluate the behavior of natural antioxidants of the fresh cut
ora-pro-nobis during storage. The leaves were selected, washed, sanitized, packed in rigid
polyethylene packages of low density and stored at 5 ° C for 12 days. Carotenoids, phenolics
and antioxidant activity were evaluated on day 1 and every 3 days of storage. There was
retention of 71.69% of carotenoids, 60.52% of antioxidant capacity and increase of 3.87% of
phenolic compounds in fresh cut ora-pro-nobis leaves stored for 12 days at 5 ºC.
