Abstract

Satisfy the need for food is a concern of humanity, currently meeting this demand is a challenge.
The local culinary knowledge is part of the food heritage of a community, which is managed
community or individual and will act or not to strengthen the group’s sovereignty and food. The
rural-urban fringe area of La Plata is a productive area, made up of different migratory flows,
on which a demanding productivist model has advanced in the quality and aesthetics of the
products, displacing traditional horticultural varieties. It is argued that despite the advance of
this model, farmers still cultivate those species and / or varieties that allow them to express
their food tastes and endure their traditions. We analyzed 51 interviews with qualitative methodology.
The information gathered indicates that varieties linked to traditions are still cultivated
and consumed at the level of self-consumption.
