Abstract

This study aimed to characterize and analyze the dynamics of the consumer market of cassava
flour in the city of Capanema, Pará. The work was done through interviews between February
and March 2016 in the Capanema city. 138 semi-structured questionnaires were applied
with objective and subjective questions, which included socioeconomic factors and consumers
behavior regarding flour consumption. The consumer market of Capanema flour was characterized
by its high requirement on the hygiene of the commercialization place, but it showed a
lack of interest in aspects that cover the production of flour. The study concluded that the consumer
market for flour, in Capanema city, needs to seek improvements in both the production
and the commercialization of the product, especially in relation to attributes directly related to
flour hygiene, such as bar code, SIF inspection, The label, among others. The consumer has
the habit of buying rice as a substitute for flour and beef as a complementary product.
