Sensory Analysis of Bio-fortified Sweet Potato Varieties in Land Reform Settlement 72, in Ladário, MS.

Abstract

This study is a sensory evaluation of six sweet potato cultivars, BRS Cotinga; BRS Rubissol; BRS Amélia; CIP BRS Nuti; Beauregard and IAPAR 69, obtained from an observation unit implemented at the Sítio Baia Branca site, located in the Land Reform Settlement 72 in Ladário, MS, on February 15, 2024. The harvest was carried out on August 8, 2024, and the sensory evaluation was carried out on August 12, 2024. The work aimed to familiarize farmers with the new sweet potato varieties and make them understand the need to ensure the quality of the products to be delivered both at the fair and in public policies. It

was a free adaptation of the Flash Profile method, which uses untrained people to evaluate the different sensory attributes, in the case of the members of the farmers' families present and the members of the technical team present, in a total of 10 evaluators. The attributes evaluated were: Appearance, Color, Aroma, Flavor, Consistency and Overall Evaluation. For each attribute, a score table from one to nine (01 – 09) was established. The results showed that the six sweet potato varieties evaluated had good acceptability and the score between the best and the lowest scored was very small. Despite the small difference in the average scores between the different cultivars, a ranking order can be made: 1st) BRS Amélia; 2nd) BRS Cotinga; 3rd) IAPAR 69; 4th) Beauregard; and tied in 5th) CIP BRS Nuti and BRS Rubissol.
