Comparation of yield and physical-chemical parameters between processing methods of Butia catarinensis pulp

The native fruits processing can be understood as a strategy in dialogue with agroecology.
Among them, an important Brazilian fruit, the Butia catarinensis, has diverse cultural, nutritional
and economic qualities. Understanding that the processing assist this food production, this
review aimed to analyze the physical-chemical parameters in order to identify and differ them,
and propound suitable methods for the inquiry by own producer. Four pulps of Butia catarinensis
were elaborated, combining water use and a sieves variation with different porosities. Using
simple and fast analysis methods, the obtained results indicated that there is a great difference
between yields and the physical-chemical parameters observed. Therefore, it is important to
distinguish different Butia catarinensis pulps and propose equipment and methodology accessible
for producers to ascertain these differentials.
