Abstract

The pulp processing of açaí juçara contributes to the preservation of the juçara palm (Euterpe edulis), an endangered Atlantic Forest plant. Like all food production, analyzes of the health safety of these foods are necessary. Thus, this work aimed to discuss the microbiological quality of açaí juçara pulp produced by four participants of Rede Juçara (REJU) in RS. For that, microbiological analyzes and semi-structured interviews were performed. The results obtained were discussed based on the terms of RDC's 12/2001 and 49/2013, from the National Health Surveillance Agency (ANVISA), as well as from IN 01/2000 of the Ministry of Agriculture, Livestock and Food Supply (MAPA). It was found that all the samples were within the standards established by ANVISA, while two samples were in agreement with the parameters established by the MAPA. It was also verified that the production of juáara açaí pulp does not pose a risk to public health.
