Physical and Physical-chemical Characterization of Creole Corn at the Green Corn Point in the Southwest Region of São Paulo, SP

This study aimed to physical and physicochemical characterization of creole corn at the green corn point in the Southwest region of São Paulo, SP. There were used Creole corncobs of the varieties Rajado, Cunha and Astecão from conventional crops conducted at the IAC Experimental Center in Campinas. The parameters evaluated were color (luminosity, a *, b *, chromaticity and hue angle), pH, titratable acidity, soluble solids, height with and without straw, diameter with and without straw, weight with and without straw and number of rows. The data were analyzed through analysis of variance with the F test, applying the Tukey test (5%) to compare the averages of the three corns. Creole corns Cunha and Astecão have light yellow grains while the Rajado has colored grains. Cunha and Rajado corn are sweeter and less acidic than Astecão. There is no difference in weight, diameter, and height without a straw at the studied varieties.
