Abstract

The present article presents as training actions of organic rural producers of the municipality
of Pinheiral about food processing, that was developed at the IFRJ / Campus Pinheiral in
partnership with the Secretary of the Environment and Rural Development of the Pinheiral Municipality.
The activities carried out were aimed at stimulating the creation of a line of organic
processes, adding value to agricultural production and offering the consumer products with
quality. Good practices in the manufacture and packaging and labeling of organic products
were topics worked on in lectures. Production of green banana flour, manufacture of minimally
processed jams and vegetables for fodder workshops. The actions contributed to a generation
of income and to the development of a local productive arrangement, as well as teaching units
for small producers in the municipality through teaching, research and extension activities.
