Abstract

The food habits of students from the field schools of the Lagoa de Itaenga, as well as in most
of the country, are based on the consumption of processed foods. The objective of the project
was to build knowledge on food and nutritional security among the cooks at three rural schools
in the city of Lagoa de Itaenga, starting from action research, in order to build new eating habits
through the introduction of organic food with educators and students. The sensitization of the
school community has been through recognition of the nutritional potential of regionally produced
foods and new ways of processing. Thus, the understanding of the productive process and
the preservation of nutritional elements in the preparation of foods encouraged the students’
habits to change, interfering in the domestic diet and consequently in the food and nutritional
security of these families.
