Abstract

The objective of this work is to conduct a discussion addressing the question of how artisanal
food production can influence the maintenance of agricultural biodiversity, peasantry, food culture
and food security.The work was developed through a qualitative research, carried out by
interviews with five families that have handmade food processing, in the municipality of Júlio
de Castilhos-RS.Artisanal food processing is a strategy to stimulate productive diversification
and the development of more sustainable systems.Short circuit markets are key to the rescue
and maintenance of food culture, and push for cleaner production.
