Memória e sabores da culinária mineira camponesa: sul de Minas Gerais

The research refers to a rescue of the memories of families on the different cultural relations established in a rural community in the South of Minas Gerais, with main focus for the Minas Gerais cuisine. The objective was to carry out a survey of the strategies used by farmers to guarantee food security and sovereignty in their peasant productive units, with a careful look at the knowledge and flavors of agricultural and agropastoral production, bringing to the article the notion and importance of multifunctionality of agriculture. For the collection of data, semi-structured interviews, culture circles, coffee with prose, consultations with family photo archives, field diary, photodocumentation, experiences and exchanges in the community were carried out. The results indicate that the use of memory, as well as the daily replication of productive and culinary practices, maintenance of creole varieties and productive management have guaranteed socioeconomic and cultural maintenance.
