Abstract

The case study sought to expand the knowledge related to the concept of ecogastronomy from theoretical bases,
confronted with the reality of different experiences, located on the island of Florianópolis - SC and municipality of Pelotas - RS.
Data collection was done through an interview script, applied to chefs, linked to the experiences, seeking to understand the
relationship with ecogastronomy and contribution to the strengthening of local socio-biodiversity and food sovereignty.
It was found that the experiences are distinctly related to local production and consumption, considering the public they serve,
trajectories and territorial particularities. In light of the observations, it became clear that for the practical and comprehensive
application of the concept of ecogastronomy, it is essential to develop educational work and public policies that ensure equal access
to socio-biodiversity foods, contributing to food sovereignty in the countryside and in the city.
